SHORT PASTRY (x biscuits and cakes with jam or fruit)

WARNING! if want to make chocolate chip cookies do not mix the melted chocolate mixture, because then you can not spread the mixture well to cut out the biscuits, add the cocoa powder instead (maybe that sugar, but in this case would be better to reduce the dose of sugar dough base). as cocoa? here I go to the eye: I put the dough until it becomes a nice dark brown (more or less than that of dark chocolate).
and then it goes like this:
- on the table clean, pour the flour, sugar and salt, forming a mound on top of which a hole is made with the fork (well, eventually becomes a volcano) ; in the crater there are the butter, lemon zest and egg yolks. Do not throw away THE ALBUM!
with your hands, knead all: if it happens that the mixture is crumbly and not particularly good aggregates, add a little 'egg whites until they managed to get a smooth and compact (with egg whites spumiglie the left you can do, but this will be another post).
- at this point, let the pastry rest: half an hour under a towel if using immediately, refrigerate if you work in the following days, in the freezer if you challenge themselves who knows when (in this case, if you make so much dough, you should divide it into small loaves, which takes less time to thaw and there forced to make one pound of cookies in time). Keep in mind that the more you rest, more and more the pastry dough becomes good, just to give you an idea, the tart goes like this: I prepare the dough on Wednesday night and put it in the fridge, cook the cake on Thursday evening; Friday night we eat. NEVER came over after dinner on Friday.
- turn the oven on 170-180 degrees and roll out as it reaches the temperature the dough on the floured tray in a layer of about 5 mm, cut out biscuits and garnish if you like: It took me over half a candied cherry on other coin chocolate, hazelnut and again and finally the grain sugar (which would be better to put after cooking x 'with the heat melts; appiccicatela with a little' honey, if no helmet).

using the molds are so many scraps that normally they are mixed up again and ristesi until exhaustion, in this way, however, mix the flour that was used to do not stick the dough to the table, with the result that you will get the toughest cookies crunchy. to remedy, you should make best use of the surface of the sheet to minimize the reimpastature. I usually stop at the third draft, on which cut square biscuits or small tarts I get pretty much rounded.
- with regard to cooking, it takes more or less 10 minutes: I suggest you keep an eye until it is golden and keep in mind that after the first batch will take less cooking time because of the oven very hot. when they are ready to understand those cocoa, put the pan in even one white, who will serve as a reference.
- once cooled, you can pack them: I put them in the freezer bags closed with a red raffia bow.

PATCHWORK & QUILTING TUTT'ASSIEME

this is the gift that I did all'Altrametàdelcielo, unfortunately without pictures the bill because it did not have time to do so; as soon as I will with the photo of the finished work.
after calculating the size of the quilt, I cut the padding and the cover (120 x 180 cm). the structure of the patch is very simple, long strips arranged in part for long, partly offshore, thus:
- sull'imbottitura I scored the bulk of the strip;
- are playing by the horizontal blue: I put sull'imbottitura with straight up, I overlapped with that blue the back up and I basted the whole, including lining.
- I machine-stitched along the strip;
- removed the basting, I rise on the blue stripe as if I had to turn the page of a book, so you're already set with blue and light blue.
- then it is up to green to blue overlay, right sides together, baste the layers 4 (in order of appearance: green to the other side, blue on the obverse, padding, lining) and then sewn. and so on until the beige landscape.
- now we start again with the vertical stripes: part of the new blue, which now overlaps the edge of the strips already attached horizontally; you baste and sew 4 layers, the basting is removed, it pops up and overlaps etc. until the blue and beige vertical.
